Recipes

When I have time (and energy) I really enjoy cooking. I like to find new recipes and try new things. I usually grab recipes online. Once I've cooked something I found online I usually forget about it even if we really liked it (and even if I pinned it!). Sometimes I'll remember where I got the recipe and be able to find it again. I decided in order to help me be more organized and to easily find recipes we liked, I'm going to post the ones we like on here so I can find them again! My favorite places to find recipes are: Six Sisters' Stuff, Our Best Bites, Jamie Cooks It Up, of course Pinterest and The Food Network.


Hamburger Potato Casserole 
One Saturday afternoon I was in a hurry to get dinner ready for the family before I went out for a girls night. I only had an hour and I had to figure out what to make with the ingredients I had on hand. I found this recipe on Pinterest. It's similar to one my dad always made in a dutch oven. Between the stove and oven I whipped it up quickly. Sam and Everly loved it. They literally ate the whole pan that evening! It's super simple and ingredients we usually have on hand.  BBQ Chicken Tacos

Egg-lish Muffin

Super easy and quick breakfast that my family loves! I buy these multi-grain English muffins at Costco that are very yummy! I'll cook turkey bacon all at once one day so that all the bacon is cooked (saves tons of time!). Then I just fry an egg, top it with some cheese and at it to the muffin. Sprinkle a little spinach on there and you're good to go! 


English Muffin
Egg
Cheddar cheese
Turkey bacon
Spinach
 


Chicken and Veggies 
2 lbs of  chicken
1 tsp olive oil
3 yellow squash
2 zucchini
1 bunch of asparagus
1 tsp rosemary
1 tsp oregano
1 tsp basil
1 tsp your favorite seasoning (Mrs. Dash, or creole seasoning is what I usually use)
1/4 cup Parmesan

I quickly made up this recipe together with things out of our garden and things we had on hand. It turned out real yummy! Cut chicken in to strips and cook in a pan in the oil. Add salt and pepper if you wish. Once chicken is almost cooked add the vegetables, rosemary and seasoning. Cook until chicken is no longer pink and vegetables are soft. Sprinkle cheese on top.



Chicken Bowtie Spinach Salad
This particular recipe happens to come from Six Sisters' Stuff. I made it for a healthy salad I found that it's very filling. It made a lot so I've been eating the leftovers for lunch this week. I think this is the first time I've ever made a salad and it hasn't gone bad before we can finish it off. Salads go bad so quickly we usually can't eat them in time. But this salad has stayed good and better yet it's still yummy days later. I'll defiantly make it again especially to give me something healthy and quick to eat for lunch. I also love that the ingredients are things I usually have on hand anyway.
