Working out and eating healthy has been a key focus for me for about six months now. While Sam was in Bluff I was able to eat SUPER healthy and I completely cut sugar. I fixed healthy quick meals because it was just me eating (I lost almost 30 pounds in 3 months!). Sam came home and I started to eat worse and worse. But now we both have made new goals for healthy eating and I'm hoping we'll be better together. I've learned to enjoy eating healthy. I can tell a difference when I've been eating well. I begin to stop craving sweets and I feel sick when I eat unhealthy. Although, I do believe in moderation and I don't think I can completely give up having a yummy dessert occasionally! I think it only takes about one week straight of eating healthy to tell a difference and begin the habit. My sister graduated in Nutrition at SUU and when I decided to start eating healthy in February I decided to ask her what exactly we are supposed to be eating. She said you're supposed to have protein, vegetables (filling most of the plate), some fruit and a very small serving of starches. Now starches are one of my biggest weaknesses. When I was pregnant I craved all the starches. So I know I have to be careful about my serving size and just eating starches in general. I based my eating habits off of what my sister told me. I ate tons of veggies with hummus. I made sure my meals had proteins and vegetables and if I was hungry for a snack it was vegetables. I bought a couple of healthy cookbooks and realized that for the most part, I had already been cooking what was considered healthy dinners. It was the snacks and treats that were getting to me. So I had to change those habits considerably. We have a little garden growing in our backyard and we've enjoyed vegetables from that as well as from our kind neighbors. I've started to experiment with my own recipes of healthy dinners just with the vegetables we've been able to grow. Here's an example of a really easy and quick dinner that's healthy and filling!!
